Coffee Flavor Wheel

Describing the taste of coffee is, in some ways, similar to wine. The description draws on one's memory bank of distinct flavors and aromas. Many factors influence these nuances in taste: growing conditions (soil type, rainfall, elevation), harvest style (whether cherries are handpicked for ripeness or mechanically stripped), processing methods (particularly fermentation), storage and age of parchment coffee, roast profiles, grind, water quality, and brewing method.

At Cogito Coffee we taste dozens of samples before selecting a lot of green beans. We design our roasting profiles in order to highlight the fullest flavors a particular coffee has to offer - which usually means a medium to light roast.
